Spending millions of VND for caviar

If the average number of months in a year is only about 20, the number of months will increase 2-3 times. Many rich men throw banquet of caviar at the end of the year to welcome guests, so it is impossible to drop.

Mr. Le Anh Duc, General Director of Vietnam Sturgeon Group, said that in order to open an caviar party at the end of the year, customers often have to book for about 2 months ahead. At that time, they will choose the best, the biggest fish, the best egg quality, take special care, wait for the day to bring to the table. Fish are transported by plane, along with fishermen staff and arrive at a healthy living place.

Operate sturgeons for caviar

Among other salted caviar, salted sturgeon caviar is the most expensive and favorite of the Western elite or those who are seeking for nutritious food. According to Mr. Duc, sturgeon caviar at the middle of growing progress would be the most delicious and nutritious. Since the eggs form in the fish’s belly it is time to exploit, divided into 4 stages. The first stage is small, scattered eggs that form on fatty tissue in the fish’s abdomen. Stage 2, the number of eggs increased, denser and larger. In the third stage, the eggs continue to thicken and become larger, with the color changing from pale to dark and the eggs are more visible. By stage 4, all eggs were fully formed, the size was standard, while fat tissue was consumed. Taking the eggs at the beginning of stage 4 tastes the best as well as the most nutritious because of the high nutritional value. After this period, the eggs will reduce quality, degenerate, easily broken, less nutrients than before.

In sturgeon caviar contains lots of minerals such as acginin and histidine and many amino acids such as omega-3, lysine, isoleucine, methionine, … These substances can help reduce the risk of depression, prevent heart diseases. Sturgeon caviar are also known as “food for love” because arginine compounds increase blood circulation. The upper class believes that regular eating of sturgeon caviar will help the body to be fully supplemented with nutrients, improve the immune system, always be healthy and not suffer from diseases such as gout, diabetes, blood fat… as in eating other animals’ meat.

Sturgeon caviar costs 15 – 25 million of VND / kg

Rich men with great taste always like to cut the fish at the table. The sturgeon must be 15-20kg/pc and provides eggs at the beginning of stage 4. Putting fish and salted caviar and eating at the table is the best way, because the caviar do not have to use preservatives, so it does not affect consumers’ health. Some rich men living in Hanoi and Ho Chi Minh City still buy canned sturgeon caviar to eat every week, but every few months they organize fish-cutting at the table once and at the end of the year, they have a banquet of sturgeon caviar, Mr. Duc said.

Narrow line of consumers

A sturgeon is farmed in the Central Highlands, usually takes 4-5 years to produce and with the weight of more than 10-20 kg. Many of them can produce up to 3kg of eggs, the least is 1kg. Depending on each, the price is from 5,000-10,000 USD. A fish has 3kg of eggs, can provide for the party for more than 100 guests, not to mention other dishes.

As an unwritten rule, in the party enjoying salted sturgeon caviar, each person should not eat more than 50 grams, only 2 teaspoons is enough. Who eats too much, is considered a lack of gentleness. The accompanying food is usually only a little taste, to avoid losing its characteristic aroma and fruity flavor.

Traditionally, sturgeon caviar must be eaten when cold. Caviar after surgery, salt and chilled, will use a small spoon, scooped into the back of the hand, let the nerves feel and get used to the cold, then slowly bring it to the mouth.

Sturgeon caviar in stage 4 are the most delicious and nutritious

Currently, Vietnam has a group of sturgeon with more than 3 million ones, the world’s largest group. However, egg production is not much, so far only about 2 tons. Only a few foreign visitors to Vietnam to travel or work, know and buy and bring back as gifts. Egg prices range from 18-25 million VND/kg. However, the boxes of caviar weighing 30grams, the price of 800,000 VND and 50 grams of 1.25 million VND did not exceed the affordability of middle-class people in the cities.

Vietnam has many hydropower reservoirs in the North, Central and Central Highlands. Using hydroelectric reservoirs to raise sturgeon is ideal, having exploited a large water surface, creating jobs for local people. At present, enterprises successfully breed sturgeon for caviar producing in a complete life circle. Enterprises said that it would raise the number of sturgeon farming for caviar to 5 million in the future. However, not all of these sturgeons can produce eggs actually, it could cut down to half.
